fowl & barley soup

substances
½ cup dried pearl barley
6 cups salt reduced chook inventory, heated
1 hen breast, grilled or bbq
1 big carrot, diced
2 celery sticks, sliced
2 spring onions, sliced
1 small onion, diced



1 clove garlic, beaten
150g clean baby spinach leaves
100g sliced mushrooms
1 bay leaf
1 tsp. thyme
1 tsp. rosemary
1 tbsp. olive oil
salt and pepper to flavor
method
warmth a pot with olive oil on medium warmth and sauté onion for a couple of minutes then add your carrot and celery, sautéing for a couple of minutes on low to medium warmth.
upload mushrooms, thyme, rosemary and garlic. retain to prepare dinner until mushrooms have softened. upload heated stock, bay leaf, and then stir in barley, season with salt and pepper to taste. shred your bird breast into soup and simmer for 10 minutes. add spinach, taste soup to see if enough herbs, add greater if you want.
serve while geared up.
